Inde i kagen er der ogs\u00e5 nogle karamelliserede mandler, der tilf\u00f8jer lidt knas og tekstur til kagen. Jeg havde f\u00e5et at vide, at der skulle v\u00e6re kage nok til 10-15 mennesker, s\u00e5 jeg lavede to kager<i>(Kage nr. 2 kommer snart)<\/i>, bare for at v\u00e6re sikker, og det var nok meget smart, for jeg fik senere at vide, at der nok var t\u00e6ttere p\u00e5 30 personer, der liiiige skulle hen og smage kage &#8211; Min far var en popul\u00e6r mand den dag.<\/p><p>Noget af det vigtigste &#8211; synes jeg, n\u00e5r man laver kage er at finde den rigtige balance. Bliver den for s\u00f8d, bliver kagen vammel. Bliver den for syrlig, er den umulig at spise. Og bliver den kedelig, ja s\u00e5, er den jo kedelig. Her med\u00a0<span style=\"font-family: Alegreya; font-size: 15px; font-style: normal; font-variant-ligatures: normal; font-variant-caps: normal; font-weight: 400;\">en l\u00e6kker hvid chokoladekage med citronmousse, s\u00e5 er vi ude i et perfekt match. Bunden er s\u00f8d p\u00e5 grund af den hvide chokolade og vaniljesukkeret, og st\u00e5r s\u00e5 godt mod den syrlige citronmousse. Men lad os v\u00e6re \u00e6rlige; citronmousse er jo i perfekt balance med sig selv allerede &#8211; s\u00f8d og syrlig.\u00a0<\/span><br \/>Det sidste stykke tid, har jeg n\u00e6rmest haft &#8216;problemer&#8217; med at finde p\u00e5 kager, fordi jeg altid ender med at t\u00e6nke: &#8220;\u00c5h det kunne v\u00e6re l\u00e6kkert med citronmousse til!&#8221;. Jeg har simpelthen lavet for mange kager med citronmousse p\u00e5 det sidste, men det er ogs\u00e5 kun fordi, at jeg simpelthen elsker den her opskrift p\u00e5 citronmousse. Den er s\u00e5 let og l\u00e6kker og syrlig og tjekker bare alle bokse af.<br \/>en l\u00e6kker hvid chokoladekage med citronmousse, s\u00e5 er vi ude i et perfekt match. N\u00e5r al sm\u00f8rret er smeltet, hakkes den hvide chokolade og tils\u00e6ttes. R\u00f8r rundt indtil al chokoladen er smeltet og stil det til side.<br \/>Sukker, \u00e6g og vaniljesukker piskes sammen til en let og lys blanding. Under omr\u00f8ring tils\u00e6ttes chokoladeblandingen lidt af gangen.<br \/>Pres citronen for saft, og riv skallen p\u00e5 et fint rivejern. Tils\u00e6t b\u00e5de saft og skal til dejen. Sigt melet i og vend dejen sammen.<br \/>Sm\u00f8r en springform p\u00e5 24 cm og h\u00e6ld dejen i. N\u00e5r det koger, tages gryden af varmen. Vrid husblassen og r\u00f8r den i citronsiruppen. Stil det til side og lad det k\u00f8le af, indtil det er fingervarmt.<br \/>Pisk fl\u00f8den til let fl\u00f8deskum. Tis\u00e6t 1\/3 af fl\u00f8deskummen til den lune sirup og vend det sammen. Tils\u00e6t det resterende fl\u00f8deskum lidt af gangen, indtil du har en let og luftig mousse. Husk at sp\u00f8rge for at kanten af kagen er godt d\u00e6kket. Stil kagen p\u00e5 k\u00f8l eller frys i indtil den er ordentligt sat.<\/p><p>N\u00e5r kagen har sat sig befries den fra kageringen og madfolin og placeres p\u00e5 det fad, den \u00f8nskes serveret p\u00e5.<br \/>Jeg pyntede min kage af med lidt af de karamelliserede mandler, som jeg hakkede groft og lagde i en lige linje ned langs midten af kagen.
